No one actually knows why or who created National Soup Month. Designating January as National Soup Month is definitely an American thing but it is catching on around the world. After all, soup is everyone’s favourite winter comfort food and you need all the comfort you can get in the bleak dark days of January.

- According to archeologists, the first soup is believed to have been eaten in 6000 B.C.. And the flavour? Hippopotamus. Yum.
- The word ‘soup’ comes from the word ‘sop’ – The first soups were broths that you sopped your bread into.

- Did you know that Americans eat more than 10 billion bowls of soup a year?
- In the USA, soup is a 5 billion dollar business.
- The most popular soup in the USA is chicken noodle soup.
- Chicken Noodle Soup was originally called chicken and noodles but a radio announcer garbled its words and the name stuck.
- The famous Campbell’s soup can gets its colours from the colors of Cornell university – red and white.
Vegetarian Winter Soups
Who said vegetarian winter soups have to be dull? Not us. And, definitely not this Instant Pot recipe for a Beer and Cheese soup. There is a bit of chicken stop in this soup so it’s not for strict vegetarians but people who like to dab at vegetarianism in an attempt to have a healthier diet.
Other option for vegetarian winter soups use vegetables that have been around since autumn – butternut squash, apple and pumpkin. Elevate your simple butternut squash recipe to the next level with the use of apples to add a slight sweetness. This Butternut Squash Apple recipe is topped with blue cheese if you want to be really daring.
Alternatively, try the Pumpkin Soup with Apple Cranberry Relish and Spicy Pepitas (roasted pumpkin seeds). The pumpkin soup is creamy and smooth and you get a zesty crunch from the toppings – a delightful combination for your tastebuds!

One of my favourite yummy soup recipes for winter calls for onion (and lots of it!). It hasn’t changed that much from the original 18th century recipe which called for onions to be cooked in a beef broth. A good French Onion Soup such as this one has slow-cooked caramelised onions and crunchy croutons with melty cheese. Yes, the addition of beef broth as an ingredient means this technically doesn’t count among the vegetarian winter soups either.
